Some nights you just don’t want to create a meal. Some nights you’re hungry for something you don’t usually get at the local diner. Some nights you just want popcorn.
So some nights, at our house, we just have popcorn. But recently we’ve came up with idea of spooning some Chimayo red chile into the oil (yeah, we make our popcorn in a pan. . .) and then, after it popped, topping it with garlic salt.
Heaven. Absolutely amazing. Better than any other popcorn you can get in the universe. The perfect accompaniment to a night of Netflix.
For those of you who don’t know Chimayo red chile, you can get the full scoop about Chimayo here. Suffice it to say that you can go there for chile and get a side of healing at the Santuario. Chimayo chile is the primo red chile, grown from seeds that are hundreds of years old and guarded by the locals like gold. Real Chimayo red chile is certified – you can buy it in several locations, but this one might be the most authentic.
Skip dinner. Or if you can’t, let this be your after-dinner snack. It’s a great way to spend a Thursday evening. . .
